1 L dark green lettuce like romaine or 4 cups
mixed greens,
2-3 ripe tomatoes, diced 2-3
250 mL green peppers, diced 1 cup
250 mL cheddar or mozzarella cheese, grated 1 cup
250 mL celery, thinly sliced 1 cup
500 mL Western Family frozen green peas 2 cups
(thawed on cookie sheet lined with paper towel)
125 mL green onion, chopped ½ cup
125 mL bacon, cooked and crumbled (optional) ½ cup
250 mL Western Family light mayonnaise 1 cup
250 mL Western Family fat-free sour cream 1 cup
1. Arrange lettuce as fi rst layer in the bottom of the bowl. Cover with a layer of chopped tomatoes, then green peppers.
2. Top with a layer of grated cheese followed with a layer of sliced celery.
3. Follow with a layer of peas. Cooking the peas is not required.
4. Combine mayonnaise and sour cream. Spread over the layer of peas.
5. Sprinkle green onions and bacon, if using, as the final layer.
6. Refrigerate until serving. This salad can be made up to 1 day before.
Makes 10 servings.
