二、武陟油茶的制作方法RecipeofWuzhiOilPaste

Ingredient:Wheatflour5kg(面粉5千克)、Cornflour1kg(玉米粉1千克)、

Sesame1kg(芝麻1千克)、Peanut1.5kg(花生米1.5千克)、Walnutkernel500g(核桃仁500克)、Salt500g(食盐500g)

SpicesPowder:altogether100g(fennel,cumin,pricklyash,cloves,ginger,cinnamon,TsaokoAmomum,tangerinepeel,FructusAmomi)

香料粉(大小茴香、花椒、丁香、良姜、肉桂、草果、陈皮、砂仁共100克)Oil:castoroil600gpeanutoil150gSteps:

1,steamthewheatflourandcornflourforabout40minutes;makeitcoolthensiftit;2,siftthesesame,dryingfryit;thengrindit;

面粉加入适量清水,加入精盐(也可用糖)、食用碱、熟猪油、鲜花椒叶和成面团,反复揉匀揉透,摘成小剂,用擀面杖擀成约0.7厘米厚的圆形薄饼坯。炉内燃煤火,上面放上鹅卵石子,烧热取出一部分,放入饼坯后,再把取出的部分石子盖在上面,上焙下烙数分钟至饼色金黄即熟。

五、川北凉粉制作方法原料Rawmateria

主料:豌豆Majoringredient:pease

配料:辣椒、花椒、生姜、葱叶、冰糖等掺合制作的红油,以及有精选大蒜捣制的蒜泥dosing:Chili,pepper,ginger,onionleaves,sugarandotheradmixturesproductionofoil,andhasfeaturedgarlicgarlicramming

制作步骤Productionsteps

1.用清水将豌豆浸泡6—8小时左右,直到泡涨为止;2.对泡涨的豌豆进行水磨(即在磨的时候加适量的水);

3.豌豆全部磨完后,用豆包布过滤。第一遍过滤出的是原汁浆,浓度大,用容器装好单独放在一边。第二遍、第三遍再加清水过滤,目的是将大部分的淀粉滤出,经3小时左右,去掉上面的清水,取出沉淀在下面的油粉和淀粉;

4.将第一遍滤出的原汁浆倒入锅内,一边加温一边用木质小擀面杖不断的进行搅动,待烧沸后,再将第二、第三遍过滤出的油粉和淀粉(浓度约60%)缓缓加入锅内,一边加一边不停地朝一个方向搅动,使之和先下锅的原汁混为一体,并继续用小火煮10分钟即可起锅;注意:后加入的油粉、淀粉要适量,太多吃起来有僵硬感,加少了,就可能像干稀粥一样,不成形。是否适量,可把搅动的擀面杖举起来看能否形成片状。5.将做好的成糊状的热粉倒入陶瓷器皿中进行冷却(不用木制器皿)。

6.将冷却后的凉粉,切成约8厘米长,0.8厘米宽(厚)条状,装入碗内,加入精盐、葱花和红辣椒油即可食用。根据各自的爱好,也可加适量的香油、大蒜和酱油。1.rinsepeasoak6-8hours,untilthebubbleup.

Note:afteraddingtheoilpowder,starchinmoderation,soeatupfeelingstiff,addless,mightseemtostemthegruel,notforming.Ifappropriate,theagitationisalifttoseewhetherformsheet.
