The Trustees of Reservations’Challenge

Attention,hikers:If your chosen escape from quarantine(隔离)has been to tackle wooded trails across Massachusetts,you can now be rewarded for your efforts.

Kukim Vazquez,a 17-year-old high school senior from Compton,US,started baking when she was in fifth grade and has spent the last few years watching YouTube courses and making more cookies and cupcakes than her friends and family are able to consume.

After a cousin encouraged her to get on Instagram to promote her baking business,she came across a jewelry-making workshop hosted by the Compton Girls Club.

Like a lot of high school students,Vazquez had been struggling during the pandemic:There were no gymnastics or other courses for kids after schoo1.Signing up for the sessions of the Club business training base seemed better than scrolling on her phone all day.Over three weekends,she and 10 other teens learned the basics of starting a small business.During a final session,participants presented their businesses to judges.

Her idea—Home Sweet Compton,a home bakery—won over the judges.“I wasn’t so focused on winning,but just learning so much throughout the process was really helpful,”she said.

At the Green Free School in Copenhagen,students learn how to read and write and they study math and science.But the curriculum centers on sustainability.Students are taught how to garden and grow their own food.They compost,collect rainwater and recycle.There are no rows ofdesks,no blackboards and no tests.

The goal of the school is to prepare the students for the green“transition”.That’s the transformation toward a sustainable society.“To me it was important to make a school that would address the green transition that we were going through,”Danish filmmaker Phie Ambo,who founded the schoolin 2014,says.

The Green Free School was not difficult to open—in theory.Anyone can set up a private school in Denmark with the state covering about three-quarters of the cost.The problem was finding a facility.“The first year,we were just hanging out in scout cabins and tents,”Ambo says,until they found an old industrial paint building.

The school’s courses are modeled on system thinking and project learning.System thinking is a way of learning that looks at how the pieces of a puzzle are related,instead of just looking at one small part.Students also focus on project learning and hands-on thinking.They do experiments on fibers and clothing,learning how much heat it takes to melt a piece of thread and what’s the difference between polyester(聚酯) and wool and how long they last.

Although sustainability and environmentalism are the key focus,the school works to include everyone without being too strict.They serve plant-based foods completely,but allow kids to bring whatever they want to eat.They serve an all-organic and vegan meal once a month and invite everyone.

“It’s to show our kids that making this whole green transition can be fun and comfortable and nice and it's not about NOT doing things.”Ambo says.“We always say‘don’t eat meat’and‘don’t fly’but we try not to be too rigid because all the parents are not on their journey yet.You can participate at all stages.We don’t want to exclude anyone.We’re all taking the first steps and learning from each other.”

A study of 2,000 adults found 61 percent think their diets are different during the lockdown,with 29 percent of those saying they are healthier than they were before.One eighth are using more plant-based foods and a quarter are choosing fresh produce.And three in ten have learned to create new dishes including curry,homemade pizza and cookies.
